An easy Sunday cooking

I have been thinking.

About my life and what takes my interests at the moment.

How grateful I am for my beautiful house and garden, my dog, husband and family.

I am luckier than most.

Today we woke up and had delicious bacon sandwiches and went for a walk to the local park. It was cold and sunny a perfect spring day to be a family of 3( that’s Frankie our dog).

The house is tidy, so why we pack for our holiday, or at least made lists. Frank had a bath.

I cooked a delicious lasagne, not traditional but a blend of my mums and the way an old friend taught me how to cook one. I love a lasagne. Delicious, layered meat and cheese, what’s not to love.

A glass of red is a must

It’s a messy photo, I am a messy cook. I didn’t make the lasagne sheets but I did buy them fresh and had enough to make another lasagne so we can eat it in a few weeks as a quick and healthy homemade meal.

I love cooking and sometimes I am just too tired of life to do it. Cooking is about love and happiness it’s not about stress and quickness. You have to put the effort in, even in small ways, to create good food. If I am not in a good place my food tastes mediocre.

Today I had the time. Today I had the love of cooking. I listened to my audio book and took my time. My lasagne will be delicious. Also taking the pressure away from me having to deciding what to cook is also a blessing that I have created.

I am going to have a glass of wine, watch an episode of Scarpetta. Snuggle with Frank then tidy the kitchen.

Have a lovely Sunday.
